Stuffed Veggies

Lately I've been trying to add some healthy new meals to my cooking repertoire. In my first two attempts I somehow ended up making stuffed vegetables. I must like them. Tonight I made tomatoes stuffed with bulgur. Here is the beautiful filling:
Besides bulgur it had onions, garlic, cumin, mint, cilantro, pine nuts, raisins, and tomato insides. I made way too much of it so I had some leftovers that I baked too. Here is the finished product:

I really liked the bulgur, which I had only eaten in tabouli, and I want to find more ways to cook it. It seems like a good alternative to pasta and rice. Unfortunately it takes a little longer to cook so I'll have to plan ahead.


Last night I made poblano peppers stuffed with polenta, black olives, raisins, pine nuts, and cheese. This meal was invented by me! I'm obsessed with cooked raisins and pine nuts. :) I also love poblano peppers.


Here they are with the rest of the stuffing:Mid-way through the cooking I decided that the peppers would need some liquid to help them cook so I added salsa. I love cheese so I put more cheddar on the top.I really liked the finished product. Next time I may use less cheese to make it healthier. I wonder what other types of veggies I could stuff!
